Strawberry season parfait

Welcome to the beginning of strawberry season...almost! We had such a lovely time going strawberry picking last year that we are already planning our trip to the farm for this season. The Foodland Ontario calendar is encouraging us this month to seek out Ontario strawberries with June's recipe; strawberry breakfast parfait. I had hoped to have found some strawberries at the farmers' market this weekend, but no such luck. Instead, we grabbed some at the grocery store and got to work on our parfaits. We switched some things up and turned them from a breakfast treat to an anytime of the day treat!

Strawberry Parfait
(adapted from Foodland Ontario 2012 Calendar)

2 cups low fat vanilla greek yogurt
3 tablespoon Canadian maple syrup
2 cups sliced strawberries
1 cup granola

1. Combine yogurt and maple syrup in a small bowl.

2. To make the parfait, layer ¼ cup yogurt, ¼ cup strawberries and 2 tablespoon granola into a tall drinking glass, wine glass or a bowl.  Repeat layering twice.

3. Pop into the fridge to chill for 5 minutes and serve.

Granola and yogurt is a breakfast favourite in our house, so this month's recipe was easy to love. The great thing about this recipe is how adaptable it is...when it's blueberry season use blueberries, when it's raspberry season use raspberries, etc, etc. The addition of maple syrup adds a sweet kick. Sometimes the most delicious dishes are the simplest.
