Remember when I made those cute Pumpkin Spice Everything bracelets? Well, I wasn't kidding. I do love pumpkin spice everything, except coffee. Which is a weird thing to confess, but I honestly do not like coffee...tea all the way. Anyhow, back to pumpkin spice and this awesome pumpkin spice granola - a simple and healthy breakfast idea the family will love.
I'm a bowl of granola for breakfast kinda girl. I love granola with yogurt, granola on ice cream, granola anytime. So, as I was eating my delicious, but non-fall flavoured granola the other day I thought it might be fun to pumpkin spice this granola up.
The addition of the traditional "pumpkin spice" spices - cinnamon, ground ginger, cloves and some actual pumpkin puree turns regular granola into a fall treat that you're going to want to make over and over again.
Pumpkin Spice Granola Recipe
3 cups oats
½ cup shredded, unsweetened coconut
½ cup pumpkin seeds
½ cup dried, unsweetened cranberries
½ cup slivered almonds
1 ½ teaspoon ground cinnamon
½ teaspoon ground ginger
½ teaspoon ground cloves
½ teaspoon nutmeg
½ teaspoon vanilla
½ cup pumpkin puree...not pumpkin pie filling
¼ cup oil (we used sunflower oil)
This is a super simple toss and mix recipe. So, toss the oats, coconut, pumpkin seeds, cranberries and almonds in a large bowl. Mix them all together.
Next, toss in the spices. Toss in the cinnamon, ginger, cloves and nutmeg. Stir the spices into the seeds and oats. You want the spices to be sprinkled all through the oats and seeds.
In a small bowl, whisk together the pumpkin, vanilla and oil. Once it is all whisked together and smooth, toss it into the dry ingredients and give it a good stir. Everything should be wet with the pumpkin mixture.
Spread the wet granola onto a parchment paper-lined baking sheet. Spread it into an even layer.
Bake the granola in a 350°F oven for 15 minutes. After 15 minutes, give the granola a toss and bake another 15 minutes. Check it again. Granola can be a little finicky. If it is still very wet, give it an additional 10 minutes. Be careful to not overbake the granola, or it will have a burnt taste. You want it to be golden and it can still be a little damp when it is done.
Remove it from the oven, toss it again and let it completely cool on the baking sheet. Once it's cooled store it in an airtight container for up to a week...it won't last that long.
Serve this granola on ice cream, or yogurt, with fresh fruit or as a topper for apple sauce...yummo.
