Super Simple BBQ Swiss Chard

My husband has received the "do not read the blog this week" warning. He's actually out of town, which means that we can do a lot of planning and creating. One week until Father's Day, which means we will be figuring out which delicious barbecue recipes we can make to celebrate this year.

The first step in making our plant is seeing what is in season at the market right now. We stopped by the farmers' market and picked up some bright and beautiful rainbow swiss chard.
 
Last year we actually grew rainbow swiss chard. Chard and kale are packed with vitamins and easy to grow. The best part is the more you harvest them, the more they grow. So, when I spied these super tender, young rainbow swiss chard leaves I knew that they would add a special touch to our Father's Day menu. But, how to prepare the chard? On the BBQ, of course! Here's what we did.

Super Simple BBQ Swiss Chard 

 
a bunch of chard (rainbow chard or kale)
¼ cup olive oil
salt and pepper

The first step is to cut out any thick stalks, thin stalks will cook easily and evenly.

Next up, combine the oil and salt and pepper in a large bowl. Toss the kale leaves in the oil. You want to coat each leaf with olive oil and salt and pepper.

Head to the grill. You are looking for medium heat. Place the leaves directly on the grill. No need to oil the grill, the leaves will cook very quickly. 
Turn leaves after about 1 minute, until they are wilted and charred.
 
We served our rainbow swiss chard with a pork chop and roasted baby potatoes...all prepared on the BBQ.

This method for cooking the rainbow swiss chard resulted in both crispy and wilted leaves. A lovely and simple side dish for any meal. I think the Mr. is going to love this menu. Isn't it great when you can walk into a farmers' market, pick something up and make a family-friendly meal from the food that you find?

    Oh, this looks fabulous! I've never BBQ'd Swiss Chard before! We grow some in our garden and I usually sautee them, roast them, use them in a stir-fry. I'm going to try your recipe!
