We are always looking for easy barbecue recipes. So, when we wanted to find a new way to cook our swiss chard, we decided to head to the grill. It is so easy to make BBQ swiss chard, and this dish is going to be a summertime favorite for the entire family.

The first step in making our plant is seeing what is in season at the market right now. We stopped by the farmers' market and picked up some bright and beautiful rainbow swiss chard.
Last year, we actually grew rainbow swiss chard. Chard and kale are packed with vitamins and easy to grow. The best part is the more you harvest them, the more they grow. So, when I spied these super tender, young rainbow swiss chard leaves I knew that they would add a special touch to our Father's Day menu. But, how to prepare the chard? On the BBQ, of course! Here's what we did.
Super Simple BBQ Swiss Chard
a bunch of chard - swiss, or kale, or rainbow
¼ cup olive oil
salt and pepper

The first step is to cut out any thick stalks, the thin stalks will cook easily and evenly. You can keep the stalks and saute them and add them to soups or sauces.

The next step is to combine the oil, salt, and pepper in a large bowl. Toss the kale leaves in the oil. It is best to use your hands for this. You want to make sure that every leaf is coated with olive oil, salt, and pepper.

Now it's time to head to the grill. You are looking for medium heat. Place the oiled leaves directly on the grill. No need to oil the grill. You will want to keep an eye on the chard. The leaves will cook very quickly. Flip them frequently.

Turn leaves after about 3 minutes, until they are wilted and charred.
We served our rainbow swiss chard with a pork chop and roasted baby potatoes...all prepared on the BBQ.

This method for cooking the rainbow swiss chard resulted in both crispy and wilted leaves. Sometimes we take the grilled chard to the cutting board and chop it into small pieces. Then toss in a salad dressing for a delicious warm grilled salad. Grilled swiss chard is a lovely and simple side dish for any meal.
I think the Mr. is going to love this menu. Isn't it great when you can walk into a farmers' market, pick something up, and make a family-friendly meal from the food that you find?
Now, as for dessert, we are going to stick with the BBQ theme and make these super cute BBQ grill cupcakes. The perfect Father's Day dessert!

Oh, this looks fabulous! I've never BBQ'd Swiss Chard before! We grow some in our garden and I usually sautee them, roast them, use them in a stir-fry. I'm going to try your recipe!
