Frequently Asked Questions About Veggie Trays
The best vegetables for a festive veggie tray are ones that will stand up to being at room temperature and that are great for dipping. I prefer hard vegetables: celery, carrots, peppers, broccoli, and cauliflower. I also like some softer vegetables like tomatoes and cucumbers. They don't discolor when left at room temperature, and people love them.
The type of tray you want to use will depend on the design you are making. If you are making one of our fun and creative designs, you will need a large tray to work on. I like to use a large cutting board. I only use this cutting board for vegetable and fruit trays to keep it clean and uncontaminated. I also like to use large baking sheets, if the design would benefit from sides to the tray. There are plenty of fun baking dishes available. Again, I only use these baking sheets for veggie platters.
The best way to store a veggie tray is to prep the veggies ahead of time and store them in air-tight containers. Keep the cut veggie separate from each other. You can prep them up to 24 hours before serving. If you make your design on the tray and then need to transport it, be sure to wrap it tightly with plastic wrap to keep your design in place. It is best to build intricate designs on-site.
The Best Trays for Creative Vegetable Trays
Here are a few of my fave trays to use for creative vegetable platters.

I love a large cutting board. A big design needs a big surface. Again, keep these cutting boards for veggie trays only. This way, you don't need to worry about cross-contamination.

I also like using baking sheets as the surface to build my designs. My Santa veggie tray was made on a pink baking sheet.

Of course, any large, decorative platter will work. You can buy new or find large platters at second-hand shops. It is best if they are flat and have sides for more intricate designs.
