I am so excited about these cookies. I have had the idea of these cookies kicking around in my head for a while. One day we were at the grocery store and my daughter asked if we could buy a tube of ready made cookies. The kind you slice, bake and eat.
They have a cute little bunny face that magically appears all through the cookie dough log. I said "nope". We make cookies all the time, we didn't need to buy ready made cookies. A lightbulb went off in my mind...we could totally make our own cookie dough logs. Remember the rainbow cookies we made last spring and the festive Christmas cookies we made last Christmas? I had a feeling I could take the same concept and make some awesome cookies. These simple Easter sugar cookies were fun to make, quick to bake and delicious to eat. Again, we began by making my multipurpose sugar cookie dough recipe. This dough is so easy to make and it always works. The dough is versatile ~ it can be frozen, it can be coloured, it can be used right away. For these Easter cookies make 4 balls of dough...2 large and 2 small. Colour 1 small ball yellow and 1 small ball pink.
Easy Easter Sugar Cookies
1. Roll the small balls into logs of dough...just like rolling a snake out of play dough. Be sure to make the log a little more oval than round...like the shape of the body of a chick or egg. When the coloured dough was rolled I set them aside.
2. Then roll out the uncoloured dough into rectangles (or close to a rectangle). Place the coloured dough on top of the rectangle...place it close to one side. Then roll the coloured dough inside the uncoloured dough.
3. Wrap this log of dough inside plastic wrap and put in the freezer for 1 hour.
Remove the plastic-wrapped dough from the freezer and place on a cutting board. **Here's the magic moment** Use a large knife to cut the log into ¼" thick slices. Revealing the oval coloured shape inside. Place the cookies on a parchment paper lined baking sheet. Bake in a 350F oven for 12-15 minutes...until the edges are golden.
Remove and set aside to cool.
Make a batch of royal icing, using meringue powder. Scoop the royal icing into a piping bag (we made our own parchment paper piping bags using this video). Use the icing, and a selection of sprinkles, to turn the dotted cookies into Easter chicks and Easter eggs.
These cookies were so much fun to make and to decorate. My daughters and their girlfriends helped to bake and decorate the cookies. I love watching kids learn a new skill and a few new tricks in the kitchen. We will be making many more batches of these cookies to decorate and give away to family and friends over the Easter holidays.
