Slow Cooker Beef Brisket Family Weeknight Dinner

I don't know why the idea to have beef brisket popped into my head this weekend, but am I ever glad that it did. I had a feeling that making a batch of slow cooker beef brisket would be a hit with everyone in my family...even the kids...and it was. I love making meals in the slow cooker, especially when the recipe doesn't require any additional cooking...those are always the best recipes. I served our slow cooker beef brisket on a bun, with a side of homemade coleslaw and caesar salad. The perfect way to end a busy weekend and head into a busy week.

Slow Cooker Beef Brisket

A super simple and family friendly, slow cooker beef brisket recipe.

Ingredients

  • 3 ½ pound beef brisket

For the BBQ Sauce

  • 1 ½ cup ketchup
  • ½ cup packed dark brown sugar
  • ½ cup water
  • ¼ cup finely chopped shallot
  • 3 tablespoon cider vinegar
  • 3 tablespoon woresetshire sauce
  • 2 chipotle chiles in adobo sauce diced
  • 1 teaspoon garlic powder
  • ½ teaspoon ground pepper

For the Brisket Rub

  • 1 tablespoon paprika
  • 1 tablespoon chili powder
  • 1 tablespoon cumin
  • 1 tablespoon dark brown sugar
  • 1 tablespoon kosher salt
  • 1 teaspoon garlic powder
  • ½ teaspoon ground pepper

Instructions

For the BBQ sauce

  • Pour all the BBQ sauce into the bottom of the crock pot, stir to combine.

For the brisket dry rub

  • Combine all the dry rub ingredients in a large bowl, stir to combine.
  • Slice the beef brisket in half...so it fits easily into the slow cooker.
  • Place the brisket in the bowl with the dry ingredients and evenly coat the brisket with the dry rub.
  • Place the coated brisket into the slow cooker. Cover and cook, on low, for 10 hours.
  • After 10 hours, remove the brisket and place in a large baking dish. Using 2 forks, pull apart the beef. Or, slice the beef into thin slices.
  • Allow the BBQ sauce to sit and then use a large spoon to remove the fat from the top of the sauce.
  • Return the beef to the crock pot and stir in the sauce.
  • Serve and enjoy

In response to the question "What slow cooker do I use?" I actually use a very old and reliable Cuisinart Slow Cooker. It used to belong to my mother. Now, if I was buying a new slow cooker, I would reach for another Cuisinart cooker...like this 6 ½ quart, stainless steel, programmable option. I think we could make a lot of great meals together.

    This sounds like a great recipe for beef brisket. I think this would be the perfect recipe to make on a cold day.

    Do you both the rub and the sauce or one or the other?

      Hi Kathy...pour the sauce into the bottom of the crock pot. Then rub the brisket with the rub and place it on top of the sauce, inside the crock pot. I hope that answers your question. The brisket is flavoured with both the rub and the sauce.

      3 1/2 pound brisket is what we used. Hope that helps.
