Pumpkin Latte Smoothie

pumpkin latte smoothie cover Okay, true confession time. I am not coffee drinker. I’m not sure how it happened, but I am a lover of tea. My husband, on the other hand is a hardcore, couple of cups a day coffee drinker. When the leaves start changing colour and the air feels crisp, he reaches for pumpkin flavoured coffee. So, today’s post is all about my husband. Isn’t it nice to make something that you know will make a loved one happy. This pumpkin latte smoothie combines our new found love for smoothies with the quintessential flavour of fall.

Pumpkin Latte Smoothie

(adapted from DrinkSilk.ca)

¾ cup Silk Vanilla soy beverage
¼ cup pumpkin puree
1 frozen banana
1 teaspoon instant espresso powder
½ teaspoon cinnamon
¼ teaspoon ground ginger
pinch of nutmeg and cloves
1 tablespoon ground flax

1. Combine all ingredients in a blender and process until smooth and creamy.
2. Enjoy.

So, what was the verdict? My husband LOVED this smoothie. He spread the word around his office and everyone wanted to know the recipe. I think we are going to be making a lot of pumpkin latte smoothies this fall.
