There are few cookies we love more than shortbread cookies. They are my eldest daughter's favourite cookies...hands-down. And, this recipe for our chocolate button shortbread cookies was the go-to cookie for her classroom parties. Holiday Shortbread Button Cookies
1 cup room temperature butter
2 egg yolks
1 cup icing sugar
2 cups all-purpose flour
45 red and green chocolate wafers (I snuck in a few dark chocolate wafers too, for me!)
First up, combine butter, egg yolks, sugar and flour in a medium sized bowl...mix until fully creamed together and the dough has formed. Yes, it is seriously that simple!
Next up, scoop out a tablespoon of dough and roll it into a ball. Place each ball about an inch apart on a parchment-lined baking sheet. Press a chocolate wafter into the ball, this will flatten the ball of dough.
Now, bake the cookies in a 325°F oven, for 15-20 minutes...until edges turn golden brown.
That's it, really. A super simple shortbread cookie that is so delicate and delicious. The addition of the red and green chocolate buttons makes them perfect for the holidays.
The kids loved helping make these and everyone loved eating them. They make the perfect addition to a holiday cookie swap.
