Rhubarb again!?!

Yes, rhubarb again. I love this sweet and sour vegetable, why not honour it twice! While skipping through the blogosphere last week I stumbled across a couple of recipes for rhubarb muffins. I am always looking for a new muffin recipe. I thought I would give these a try.
Rhubarb mini-muffins
(adapted from Family Bites)

Ingredients

2 ½ cups pastry flour
1 teaspoon baking soda
½ teaspoon salt
½ cup olive oil
1 egg
1 cup buttermilk
1 teaspoon vanilla
2 cups finely diced rhubarb

Crumble topping

2 tablespoon cold butter
2 tablespoon pastry flour
3 tablespoon brown sugar
2 teaspoon cinnamon

Steps

1. pre-heat oven to 350F and line or butter mini muffin baking sheet
2. in a large bowl sift together flour, baking soda and salt - once sifted add rhubarb

3. in a medium bowl blend sugar and oil
4. once combined, add egg, buttermilk and vanilla
5. add wet ingredients to dry ingredient, do not over mix...just until combined

6. prepare the crumble topping; using a fork combine the cold butter, flour, sugar and cinnamon

7. scoop dough into muffin baking sheet, and top with crumble topping

8. bake for 15 minutes, or until toothpick inserted comes out clean and tops are golden brown

9. enjoy

Hot tip: Don't forget if you don't have any buttermilk simply make your own. Add a tablespoon of white vinegar to the bottom of the 1 cup measuring cup, then fill with milk. Let sit for a few minutes and viola...buttermilk.
Hot tip 2: Our muffins always get sticky after they have been around for a day or two...solution...keep a few out and store the rest in the freezer. Pull them out as needed. You can warm them in your oven or toaster oven. No more mushy muffins.

We will be enjoying these muffins all week long as we fulfill another of our Earth Day pledges...no television watching week. We committed to give up television for one week. While the girls will have no problem, because they don't watch much t.v., my husband and I will surly miss our evening relax in front of the tube. Watch out creativity...here I come. I'm looking forward to having a little time to read and write...and saving energy too!

    You forgot the sugar! I checked the original to find out that I needed 1/2 cup of brown sugar. Excellent muffins.
