Delicious Dill Pickle Dip Recipe

You know we love a good dip. Whether it's a sweet dip for a fruit tray or a savoury dip for a big vegetable platter - we love all dips! We have made and shared all kinds of yummy vegetable dips, but I have been wanting to make our own dill pickle dip for a while now. So happy I did.

What makes a great vegetable dip? In my opinion, a great dip has to be simple to make, use a few ingredients and be flavourful. Yes, I love sour cream, but I want my dip to taste more flavourful than a bowl of sour cream...you know what I mean.

Oh, and I also love a dip that enhances the flavour of the thing being dipped. The flavour shouldn't be fighting with the fruit or the vegetables.

This dill pickle dip checks all the boxes. Does your family love dill pickles? Or, dill in general? If they do, they are going to love this dip. There is something so fresh and bright about dill. It wakes up everything you add it to. This dip uses 3 different sources of dill - fresh dill, dried dill and dill pickles (of course). If your crew doesn't love dill pickles you could leave out the pickles and add some more dried dill and a little red wine vinegar as a substitute.

Dill Pickle Dip Recipe

½ cup sour cream
4 ounces cream cheese, room temperature
1 teaspoon dry dill
¼ cup fresh dill, chopped finely
⅓ cup chopped pickles
1 tablespoon pickle juice
¼ teaspoon ground pepper
various vegetables - sweet peppers, cucumber, beans, cauliflower

Make sure you pull your cream cheese out of the fridge about an hour before you want to make the dip, so it softens to room temperature.

Cream together the sour cream and cream cheese in a medium bowl. No need for any fancy equipment for this, simply use a rubber spatula or a whisk. Beat until the mixture is smooth and free of any clumps of cream cheese.

Stir in the dried dill, the chopped dill and the pepper.

Next up, chop the pickles into small dice. If your family loves dill pickles, you can add more. If you'd rather leave the pickles out, then add another ½ teaspoon of dried dill and 1 teaspoon of red wine vinegar. Stir the pickles into the mixture.

Finally, stir in the pickle juice. Add 1 tablespoon and then check the consistency of the dip. If you'd like a looser dip, add another teaspoon of juice until it reaches the consistency you like.

Taste the dip and add salt if you need to. The pickle juice and pickles add salt to the dip, so depending on the pickles you use you may or may not need to add salt.

Transfer the dip to a serving dish, cover and set in the fridge for at least an hour before serving. Serve with your favourite dippable veggies or chips.

This dip was an instant hit in our house. It makes a fantastic dip for chips...so good. I think this dip would make a great addition to any potato dish - might have to try it as a potato salad dressing. I smeared some on a bagel too. Another great way to enjoy the dill pickle goodness. I told you, we love dill!
