The Cozy Comfort of Chicken and Rice Soup

Last weekend we went to Soupstock, a fundraiser filled with many, many different types of soup. Eating all of the different types of soup reminded me of just how much I love soup. Especially in the fall. I do not come from a family of soup makers. Be sure to check out all of the delicious chicken recipes we have gathered in our easy peasy chicken recipes for families post.

Most of the soup I have consumed in my life has come from either a can or a box. However, now that I am the mom I really love making homemade soup. Yes, I still serve ready made soups to my kids. But, as the cool weather settles in there is nothing quite as cozy and comfy as chicken and rice soup.

Cozy Chicken and Rice Soup

2 carrots

2 ribs of celery

2 shallots

1 tablespoon olive oil

2 cups cooked rice

2 cups cooked, chopped chicken breast

6 cups chicken or turkey stock

1 teaspoon dried thyme

1 bay leaf 

salt and pepper to taste 

 1. Place olive oil, chopped carrots, celery and shallots in a large, heated sauce pan.

2. Saute the veggies until the carrots and celery are softened. Try not to brown the veggies, stock can be added if the veggies start to brown.

3. Once the veggies are softened add turkey stock or chicken stock and bring to a boil.

4. Once the soup reaches a boil, turn the temperature down to a simmer...add bay leaf, thyme, salt and pepper. Simmer for 15 minutes.

5. Add cooked chicken and cooked rice to the pot...continue to simmer for at least 15 minutes (can be simmered for as long as you need).

6. Serve with fresh bread.

This soup was perfect for a damp and cool fall day. There is something so comforting about filling the house with the smell and the warmth of soup. Everyone in our family loved the soup. Any leftover soup could be stored in the freezer and reheated another time. Or, like in our house, the leftovers make a perfect lunch the next day.
