It's apple picking season. Every fall we head to the apple farm and pick a bushel full of apples. We all have a favourite apple recipe, right? A standby recipe that we make every single fall. Well, this year I decided to switch things up and make a recipe that takes advantage of another fall favourite - leftover roast turkey. Turkey Hand Pies Apple Picking Trip

What is everyone's favourite part of Thanksgiving dinner at our house? The stuffing of course (or dressing, depending on how you prepare it). This recipe combines all those familiar turkey stuffing flavours in a handy hand pie. Peeling Apples

These are perfect for the kids' lunch box or serve them with a salad and you have a quick dinner. They take 30 minutes to make and taste amazing.

Tasty Leftover Turkey Hand Pies

½ cup chopped celery ½ cup chopped carrot ½ - 1 cup chopped toasted turkey ½ cup chopped apple ½ cup shredded cheese ¼ teaspoon dried thyme 1 sheet ready made puff pastry ¼ cup all purpose flour 1 large egg Combine chopped celery, carrot, apple, turkey and thyme in a bowl - toss and set aside. Roll out sheet of puff pastry on a floured surface. Use a sharp knife to cut the the pastry into 4 large squares. Pile ¼ of the veggie and turkey mixture and shredded cheese in one corner of the puff pastry square. Turkey Hand Pie Recipe with Egg Use your fingers (or pastry brush) to coat the edge of the puff pastry, around the filling. Fold one half of the square over the filling, to create a triangle. Pinch the egg edge together. Fold in any excess pastry. Cut a single slit in the top of the pastry triangle. Place the pies on a parchment paper lined baking sheet. Brush the remaining egg over the pastry and sprinkle with salt and pepper. Leftover Turkey Hand PieBake in a 400°F oven for 20-25 minutes...until the pastry is golden and puffy. Let cool and enjoy.
