It's getting a little Seuss-ie around here this week. Friday would have been Dr. Seuss' birthday. He actually passed away 21 years ago. His legacy lives on in our house and I know millions of other homes. We all have our favourite books...The Cat in the Hat, Hop on Pop, Green Eggs and Ham. I would wager that most people in the world have heard of, or read a Dr.Seuss book. Simply amazing. Why do we love them so? Could it be the creative text, the easy rhyme rhythm of the words, or the delightful illustration? I love it all. These books remind me of my childhood. Last year I wrote a few posts that related to Dr. Seuss books...ABC Scavenger Hunt, The Shape of You the Shape of Me and Ten Apples Balance Game.

Today we kick things off with an ode to the Grinch. For as long as I can remember I have called roast beef dinner...roast beast. It is etched in my brain! It is the true sign that the Grinch has changed when he sits down at the Who's long dining table and carves the roast beast.
Simple Roast Beast
2 lb rump roast
1 medium onion
5 cloves of garlic, finely chopped
1 tablespoon fresh sage
1 tablespoon fresh marjoram
salt and pepper
1. Preheat the oven to 375F
2. Let your roast sit and come up to room temperature
3. Cut the onion into thick wedges (I ended up doing 6 pieces) and line up in two rows in the bottom of a shallow roasting pan.
3. Combine the garlic, sage, marjoram, salt and pepper in a small bowl HOT TIP: You can use whatever herbs you like, I happened to have these ones on hand, but you could easily use thyme, parsley or rosemary.
4. Spread the garlic and herb mixture on a plastic cutting board then place the roast upside down on the garlic and herb mixture.
5. Turn the roast over and press the mixture all over the roast.
6. Place the roast on top of the onions in the shallow roasting pan...they will act as a rack for the roast.
7. Place the roast in the preheated oven...cook for approximately 90 minutes...test with an oven safe thermometer.
8. Remove from the oven and let rest on a cutting board for about 15 minutes.
9. Slice and serve.
We served our roast beast with mashed potatoes, roasted carrots and spinach salad. It was a very Grinch inspired meal. Come back tomorrow for the linky party where you will find many, many more activities and creative ideas.
