Valentine's Day Chocolate Kiss Filled Cookies

Everyone loves a surprise and I know I love a surprise that involves cookies and chocolate. This recipe combines my fave sugar cookie recipe with a hidden chocolate kiss tucked in the middle. From the outside, they look like regular cookies, but look out for the chocolatey middle! The perfect Valentine's Day cookie. Be sure to check out all of our favorite Valentine's Day baked treats.

These cookies are easy to bake. They are allergen-free, so they are a great option for classroom parties. Who will you surprise with these tasty treats?

Valentine Chocolate Kiss Filled Cookies

Ingredients

1 cup room temperature, unsalted butter
⅓ cup packed brown sugar
⅓ cup granulated sugar
1 teaspoon vanilla extract
2 cups all-purpose flour
18 chocolate kisses
½ cup icing sugar
2 tablespoon water
¼ cup of decorative edible sprinkles

Directions

First, cream together the butter with both the white and brown sugars. Cream together until the color is light and the butter is fluffy.
Next, stir in vanilla and mix until everything is combined.
Now, pour in the flour, 1 cup at a time, and beat until cookie dough is totally combined and smooth.

To form the cookies, press an unwrapped chocolate kiss into the center of a tablespoon of cookie dough. Roll the dough in your hand, so that it totally covers the entire chocolate. 
Now, place the cookies on a parchment paper-lined baking sheet, about 2 inches apart, they will spread a little.
Bake in 375°F oven for 12-15 minutes, until the bottom of the cookie is golden brown.

Once the cookies are baked, place them on a rack to cool completely.
Now it's time to make a simple glass by stirring together the icing sugar and water in a small bowl. If the glaze is too thin, add a little more icing sugar.

 Dip the tip of a fork into the glaze and drizzle the glaze over the cooled cookies.
It's time to add some color. Pour the sprinkles into a shallow bowl. While the icing is still wet, pick up the cookies and press them, icing side down, into the sprinkles - this will ensure the sprinkles stick.

 Aren't these fun cookies? I think they are perfect for Valentine's Day, but you could bake them any time of the year. And, there are so many chocolate kisses you could tuck inside.
