Chipotle Chicken Dip and Chips Appetizer

Let me just start today's post by saying that I literally put this dish down on the table and 10 minutes later it was gone. Done. Eaten. Every last drop. I would say that this chipotle chicken appetizer was a success. Be sure to check out all of our amazing chicken recipes.

Yep, it's time again for us to dive into the Foodland Ontario calendar and see what's on the menu for November. I made a couple of changes to suit my family...the original used ground beef and was an individually served appetizer. If you are looking for a simple, yummy appetizer for watching a Sunday football game, waiting for Thanksgiving turkey or a holiday party treat this chipotle chicken recipe is perfect.

 

Chipotle Mexican Chicken Dip and Chips

 
1 (186ml) can chipotles in adobe sauce
1 lb ground chicken
2 roma plum tomatoes
1 shallot, diced
1 teaspoon cumin
1 teaspoon chili powder
½ teaspoon salt
½ teaspoon pepper
½ cup shredded cheddar cheese
⅓ cup sour cream
tortilla chips
 
1. Puree the entire can of chipotle chiles, and place in a small bowl.
2. Seed and dice tomatoes.
3. Cook ground chicken and shallot in a skillet.
4. Drain in colander. Saute tomato, cumin, chili powder, salt, and pepper in a skillet. Once tomatoes are softened return chicken to skillet and toss.

5. Stir in 2 tablespoon of chipotle sauce...cook  1 minute and remove from heat.

6. Scoop chicken mixture into a shallow baking dish and top with cheese.

7. Place baking dish in oven and broil until cheese is melted.

8. Serve immediately with a bowl of sour cream and chips and optional guacamole.

As I said this dish was a massive hit with my family. In fact, it was eaten so quickly that I didn't even get a good picture of an actual serving of it! Seriously, my pictures are all blurred by the hungry hands of my family. That's okay, I love it when people love what I cook. Enjoy.
