In Season - Strawberries!

It's that time of the year...strawberry season! I love strawberries. Somehow, I have never been strawberry picking before - never. Tomorrow morning I will be packing up my family, with a map, applying the sunscreen, gathering up the hats and heading to the strawberry patch. I'll report back later this week on how we make out. (look here to find a "pick your own" farm in your area) Yesterday however, I went to the next best place to get strawberries - the farmers market. I picked up quart and decided to experiment with some puff pastry. Here's what we made.
Mini Strawberry Tarts

1 package of puff pastry
1 pint fresh strawberries
1 tablespoon sugar
zest of 1 lemon
1 egg
butter (for coating mini-muffin pan)
Steps
1. defrost the frozen puff pastry overnight, in the fridge
2. preheat the oven to 400F
3. grease a mini muffin tin with butter
4. combine strawberries, sugar and lemon zest in a bowl, let sit

5. cut puff pastry into squares
Hot Tip: To determine the size of puff pastry to cut, first use a piece of parchment paper to line the muffin tin.

Use the parchment paper as a template and transfer the size to the puff pastry.

6. push the squares of puff pastry into each section of the muffin tin

7. spoon a tablespoon of strawberry mixture into each pocket of puff pastry
8. combine egg with 2 tablespoon of water, brush egg wash on the edges of the puff pastry

9. sprinkle moistened edges with sugar
10. bake in the oven for 10-15 minutes, or until the pastry is golden brown

11. remove bundles from the muffin tin and place on cooling rack
12. enjoy!
