What did you do for earth hour? That's the question everyone was asking today. Well, we had good friends over for dinner...by candle light. The kids gathered up all the battery powered night lights and toys. And my husband didn't feel it wasn't cheating when he used the computer, unplugged, to listen to music. My girls made some pretty thoughtful artwork for the event.

What was on the dinner table? Tacos! A true favourite in our house. Normally we use ground chicken or ground beef. However, for Earth hour night we decided to bust out the crock pot and kick it up a notch (does anyone remember Emeril?) Here's what we did.
Slow cooker beef tacos
serves 4 - 6
Ingredients
1 pound flank steak
1-½ cups beef stock
½ teaspoon chili powder
½ teaspoon ancho chilli powder
¾ cup chunky salsa
½ cup rinsed and drained black beans
2 tablespoon canned chopped green chilies
½ cup chopped cilantro
Steps
1. whisk together beef stock and chili powders in crock pot
2. add flank steak to crock pot
3. cover and cook 4-5 hours on high, or 8-10 hours on low
4. transfer cooked steak to bowl and shred with 2 forks
5. empty all but ¼ cup of liquid from the crock pot
6. return shredded steak to the crock pot
7. add salsa, beans, chilies
8. cover and cook on high until heated through; about 5 minutes. or cook on low until ready to serve

9. serve taco filling with your selected toppings
This is a great recipe to make any day of the week and for any occasion. Make extra and the leftovers can be frozen for a quick weeknight dinner option. Enjoy!
