This is a super simple toss and mix recipe. So, toss the oats, coconut, pumpkin seeds, cranberries and almonds in a large bowl. Mix them all together.
Next, toss in the spices. Toss in the cinnamon, ginger, cloves and nutmeg. Stir the spices into the seeds and oats. You want the spices to be sprinkled all through the oats and seeds.
In a small bowl, whisk together the pumpkin, vanilla and oil. Once it is all whisked together and smooth, toss it into the dry ingredients and give it a good stir. Everything should be wet with the pumpkin mixture.
Spread the wet granola onto a parchment paper-lined baking sheet. Spread it into an even layer.
Bake the granola in a 350°F oven for 15 minutes. After 15 minutes, give the granola a toss and bake another 15 minutes. Check it again. Granola can be a little finicky. If it is still very wet, give it an additional 10 minutes. Be careful to not overbake the granola, or it will have a burnt taste. You want it to be golden and it can still be a little damp when it is done.
Remove it from the oven, toss it again and let it completely cool on the baking sheet. Once it's cooled store it in an airtight container for up to a week...it won't last that long.
