Cupcake-fest - Part 2

The Music
When deciding the music for a party we usually try and select music that fits the theme. For instance, last year was a monkey themed party...we went with the soundtrack from Madagascar 2. For a cupcake party, what do you choose?? This year my daughter voiced her opinion, and it was an interesting choice...Band of Horses. This fits well with our love of CBC Radio 2. Check out the Band of Horses single Laredo to see some bearded, plaid shirted dudes playing some melodic tunes.

However, the music changed when it was time for pizza making in the kitchen. This one was a no-brainer...italian folk music. We love listening to the accordions and acoustic guitars strumming away.
The Cake
Well, the girls really wanted me to make a GIANT cupcake...tempting. They also put their votes in for a fondant laden "Little Pet Shop" cake. I opted for a super surprising rainbow cake. Rainbow on the inside, not the outside. Imagine a cake that looks like a regular cake on the outside, but when you cut it...rainbow layers!! Here's the how to.
Ingredients
2 boxes of cake mix - depending on the number of layers you wish to make, I used 2 boxes to make 4 layers of cake
food colouring - red, blue, green, yellow
2 buttercream icings and 1 chocolate icing - again depending on the number of layers you are making
Steps

Hot tip: do not let the kids participate...the less they know the better the surprise

1. prepare the cake mix according to package instructions (or make your cake from scratch)
2. divide cake mix in two bowls
3. add food colouring to each bowl of cake, mix to create the desired colour, approximately 2 teaspoon of food colouring
4. pour the individual bowls of coloured cake mix into separate baking pans
5. bake the cakes according to package instructions
6. repeat making and baking as many layers as you wish
7. once the cakes have fully cooled, stack cake layers one on top of the other with chocolate icing between the layers
8. ice outside of cake, decorate as you wish
My kids said they didn't understand what was so spectacular about the cake...until we sliced into it...and then they understood how fantastic it was. I may never make another type of cake!
PS - One more note about the loot bags. The kids were able to take home their cupcake creations in colourful chinese food take out containers, with balloons...of course!
