The Best BBQ Chicken Wing Rub

We are knee-deep in barbecue season. We are making our way through all of our family's favourite barbecue recipes. The summer heat is on, so the stove is off. Do you keep your stove off all summer long? Be sure to check out all of our amazing easy chicken recipes.
 
It is so hot that I have to do my baking at night. I've been making cookie dough during the day and then baking the cookies after the sun goes down. Crazy. This weekend when we were planning our dinner we asked the girls what they wanted to have on the grill...chicken wings! As I said before when it comes to barbecuing my husband is pretty darn good. I know that BBQ chicken wings are not the easiest thing to grill. Apparently, the secret is grilling using an indirect heat technique...we'll get into those details soon. As for how to dress the wings that's easy we've created an amazing chicken spice rub that you are going to love.

BBQ Chicken Wings with Chicken Rub

2 lbs chicken wings
2 tablespoon bbq sauce of your choice

Chicken Spice Rub

3 tablespoon cumin
3 tablespoon ground coriander
3 tablespoon ground ginger
2 tablespoon garlic powder
2 tablespoon onion powder
1 tablespoon allspice
1 tablespoon cinnamon
1 tablespoon cloves
1 tablespoon ground fennel seed
½ tablespoon ancho chile powder
3 tablespoon brown sugar
2 tablespoon kosher salt
2 tablespoon ground black pepper
1 teaspoon cayenne pepper

The first step is to make the chicken spice rub. Combine all of the spices in a resealable plastic bag. This will make mixing the rub super easy.

Place the chicken wings in a shallow dish. Pour 2 or 3 tablespoon of spice rub on the chicken wings and rub over wings, with your hands. You want the wings to be evenly coated. Set the wings aside and ready the grill.

Indirect heat grilling technique - Turn both the right and left burners on and preheat barbecue to medium temp (around 400F). Once warmed up, turn off the right burner. Now, place the chicken wings on the right side of the bbq and put the lid down - you are now grilling the chicken wings with indirect heat. Turn the wings every 3-5 minutes. Cook until golden brown and firm to the touch, approximately 25 minutes.

At around the 20-minute, mark baste with your favourite bbq sauce...or you can leave them dry...depends on your preference. You could totally use our Father's Day bbq sauce, it's a fave in our house.

Remove the wings from the grill and enjoy.

The girls LOVED these wings. We served our wings with coleslaw and corn on the cob. We transferred the rub leftover chicken spice rub to a small mason jar and it will last all summer long. Hmmm, I wonder if it's okay to have wings two nights in a row?
